Star Spangled Oatmeal Cookies

Can you believe that half of the year has already gone by? Sometimes it feels like I'm rushing through life without a second to catch my breath. It definitely felt like that this past month. Mari and I were travelling a lot, work was crazy and Ramadan was in full swing. It was starting to feel like we were in an unsuccessful long distance relationship. Luckily the stars are re-aligning because the fiscal year just ended and work projects are wrapping up, Ramadan is coming to a close and we will both be in town for most of July.

July 4th is Independence day in the U.S. aka starting the latter half of the year with a weekend filled with food and fireworks. July is also a great time to reflect on the first half of the year. As I do that, I know my goal for the rest of the year is to post more recipes. With that in mind, it feels right to start off with this recipe for star spangled oatmeal cookies. 

Forget about all the grilled meat you're going to devour because there comes a point in the weekend when you can't eat another rib, but you still have space for dessert. That’s a good time for these cookies. Oatmeal cookies sometimes get a bad rap for being "blah", but I think they are the best cookies to make at home.
